As per your fifth definition that I have quoted above, Enterprise software or an Enterprise Licence is intended to provide a company-wide solution. As per the OP's dictionary definition, the "Project or Undertaking" in the cases quoted through the OP is a company.
A company-wide solution means that it will likely be used wherever a company comes with an office, or perhaps a site. So an Enterprise license will provide a solution for all of a company's sites. This can be different to a Site license, which may only cover one location belonging to a business, rather than all of them. Anther technique term Enterprise is merely to point an entire company, and isn't just limited in definition to something software related. In my opinion, the word "enterprise" inside a software setting usually refers to software being written for a large corporation. It also often refers to internal software, rather than client-facing software.
This might seem like an arbitrary line to draw (not to mention,[link widoczny dla zalogowanych], what exactly is "large"), but having written software for any number of different types of companies,[link widoczny dla zalogowanych], I will tell you the needs of huge businesses is extremely dissimilar to the needs of small companies,[link widoczny dla zalogowanych], that is again very different to the needs of people.
Problems that are often irrelevant (or rather,[link widoczny dla zalogowanych], not worth investing in) for a lot of small companies include:
High availability / seamless failover
Redundancy / disaster recovery
Privacy of customer data
Compliance to regulations
Realtime monitoring, rich trace info for troubleshooting
An emphasis on reporting (typically permitting intelligent management)
I would hazard a reckon that the reason being the overheads and profits of a big company take presctiption a completely different scale to a large company. If your small company's payrolls go offline, you can pay by hand, or apologise to everyone personally. If it occur in a large corporate, there's an uprising. I've had a bank throw around amounts of several millions of dollars being lost each hour until a bug was discovered - it puts the perspective on things. Reliability is a big thing for most large companies (well, at least on paper).
In theory "enterprise solution" is any type of solution that's apt enough for large scale corporate business,[link widoczny dla zalogowanych]. In practice nevertheless it means solutions developed with "nobody get's fired for hiring IBM" mentality.
On the other hand you will find the likes of Google, Facebook, Amazon etc. who've built their business on solutions not traditionally considered "enterprise level". For instance they initially were using cheap,[link widoczny dla zalogowanych], CotS hardware. Software they are using is Free, with great role played by dynamic languages,[link widoczny dla zalogowanych], that also aren't traditionally considered "enterprise ready" (even though they are popular by enterprises).
